Angelica (Angelica archangelica)

Angelica is Greenland's largest perennial herbaceous plant. It grows stalks to a height of 70-200 cm, with large compound umbels of green flowers that are 10-20 cm in diameter. The small umbels are 15-25 mm large and round.

Angelica is eaten fresh as an accompaniment to fish and meat, or alone as a vegetable. Fresh shoots can be used in salads.
Angelica is used to make jam, sweets, beverages and cookies with the seeds of the plant. The stalks can be peeled like asparagus and eaten raw, blanched, roasted or candied.
